Thanksgiving with Me!
What I am bringing to the table...
1. Colorful food, different textures and flavors,
and utilizing fall's finest foods.
1. Thanksgiving Kale Salad
| All the colors, all the textures, all the flavors. Yes, a salad on your Thanksgiving plate can be yum! Made with: Pomegranate Seeds, Roasted Butternut Squash, Roasted Pumpkin Seeds,
and Goat Cheese
2. Cranberry and Pear Sauce
| Tart, Sweet, & Oh So Pretty!
This side dish will add a nice mix of flavor and add a beautiful color to the plate. The recipe is very simple, too.
3. The Best Chocolate Pumpkin Bundt Cake
| I love the texture of a bundt cake, it's moist but dense. This cake also has a nice crunch on the edge and when you bite into a chocolate chip. Mmm.
Life is too short to eat mediocre dessert.
4. Pumpkin Spice Donut Holes
| Have a brunch Thanksgiving to attend? These bite-sized, homemade balls of goodness are the perfect sweet treat to bring. I can't wait to enjoy a couple with a cup of coffee!
This year I am trying to slow.down. for the holidays, I don't like what it feels like to get overwhelmed by a to-do list and the demands of trying to do allll the things well. When I am overwhelmed and rushed, I get frazzled. When I am frazzled, I am not enjoying the moment and I am killin' the good vibes. That is just about the opposite of what the holidays are all about. How can I fix this? I organized my to-do list with things I actually need and want to do, and then I broke it down into steps. For Thanksgiving food,
here is what that looks like:
1 Week Before Thanksgiving:
-Make the desserts and freeze
-GIVE: Don't forget to give back. Whether it's donating food and clothes, giving undivided attention to loved ones, or just giving yourself the grace to slow down and simplify your demands.
Four Days Before Thanksgiving:
Two Days Before Thanksgiving:
-Make Cranberry and Pear Sauce,
cover and refrigerate.
Day Before Thanksgiving:
-Wash, dry, and chop kale.
-Roast butternut squash and pumpkin seeds.
-Get desserts out of freezer to thaw overnight.
Wake up & drink special coffee! Write down (3) things I am thankful for this year.
-Brewed hot coffee with whole milk, splash of pure vanilla extract (1/2-1 tsp.) and a couple shakes of pumpkin pie spice.
Have a balanced breakfast:
-Option #1: Scrambled eggs and fruit
-Option #2: 2% Fage yogurt (plain) with fresh berries, pumpkin granola, and a sprinkle of chia seeds on top
Move & be thankful for what my body CAN do:
I will either go walk at the park or do this at-home workout depending on the weather, how much time I have, and what I feel like doing.
